Our EVO oil is produced only with olives from the farm, harvested by hand between November and December when not yet fully ripe and sent for pressing within 24 hours.

Aroma : The cold pressing brings out the spicy fruity aroma and the characteristic flavor of Tuscan oil. Intense when young, with a tendency to take on golden tones over time. Fruity, vegetal, with evident references to artichoke aromas; over time the initial spiciness evolves into a softer but decisive, intense and persistent taste.

Bottled without filtering, it can naturally produce a slight sediment.
